Add roasted cashews or almonds if a Vegetarian dish. For the meat lovers I recommend serving this salad with lamb or beef either roasted or grilled
- 1 shallot , diced
- ½ celery, diced
- 1 yellow capsicum large, roasted whole, then skinned & slice( use green if yellow not available)
- 1 red capsicum large, roasted whole, skinned & diced
- 2 garlic cloves Russian, roasted whole with skin on
- 1 rocket bunch or 1 bag Lady Bird Wild Rocket, chopped coarsely
- 1 cup Ecor Brown Basmati rice
- 100gm snow peas, broken up
- Olive oil
- Roast the capsicum and garlic in the oven for 20 minutes at 180c
- Cook rice, rinse and cool
- Place all ingredients in a serving bowl
- Peel the skin of the roasted garlic, mash with some olive oil
- Pour garlic mix and extra olive oil over salad
- Toss & serve
